Our grass-fed Hanging Tender, often called the “butcher’s cut” because the butcher would take it for his own, still has the same power to satisfy. Also, there’s only one Hanging Tender per animal, making it even more special. It’s full of deep, beefy flavor and cooks up tender with hardly any effort. A quick sear in a cast-iron skillet or a few minutes on the grill is all it needs. Slice it thin for fajitas, pile it into warm tortillas, or serve it straight off the cutting board for a cozy steak-and-potatoes dinner.
